Make this burger with beetroot pulp or minced beetroot.
I asked on social media what recipe SLSN-fans preferred to see first. The winner definitely is the beetroot burger (follow by NY Cheesecake). So there we go. I made this burger with my leftover juice beetroot pulp. But you could definitely use grated (use your kitchen machine if you want to avoid a reddish kitchen..) beetroot as well.This salad! Another one of Ottolenghi's surprises. Not that you wouldn't expect any thing less from this great chef... he continues to blow me away with new flavor combinations. I've made this salad so many times by now. It's one in the quality range quick, easy, and like I said, wonderful flavors. A brilliant combination.

This soup is one of my favorites (this pumpkin soup with orange thyme is my other favorite). I've so many special memories eating or making this soup. Obviously it's always during cosy autumn or winter days. With the loveliest people. My first memory of this soup was with my previous boyfriend Jurriaan. I recently organized a dinner party for eight friends. I tried to include as many pulp dishes as possible. One of the items was this pulp veggie burger. Personally, I like a bite. My friends too - the burger was a succes. Pulp + wasabi + chili. Apparently it’s a good combination (no, it IS!).
"Hmmm YUM..." every time I taste this soup again... Especially after a day: then the taste is even better.
This is (so far) one of my favourite Ottolenghi dishes. I have to try many more recipes from his book 'Plenty' (Dutch version) - a fantastic b-day present from Lelle & Len-, but I keep making this one! No wonder. Everybody loves it. There we go again, another Yotam recipe :). I love this mix of pumpkin with red union! My dear friend Alex surprised me so much! He gave me this wonderful cookbook 'Jerusalem' a few months ago. Once a friend gave me a cookbook and said: "Sorry I'm giving you such an un-personal present." But it's actually (really?;) something that makes me incredibly happy. Especially 'An Ottolenghi'.
